  1. Bring water to a boil in a large pot.
  2. Meanwhile, place the olive oil, miso paste, Parmesan cheese, lemon zest and lemon juice in a large skillet over medium-high heat.
  3. Gently heat the mixture until the Parmesan cheese and miso dissolve.
  4. Cook the ramen noodles in the boiling water for 2 minutes or until cooked.
  5. Remove and reserve about one-third cup of the noodle cooking liquid.
  6. Pour the noodles directly into the pan with the sauce and add the noodle cooking liquid.
  7. Mix the noodles in the sauce until it has thickened.
  8. Garnish with scallions, Parmesan cheese and the mini ham nuggets.
