- Bring water to a boil in a large pot.
- Meanwhile, place the olive oil, miso paste, Parmesan cheese, lemon zest and lemon juice in a large skillet over medium-high heat.
- Gently heat the mixture until the Parmesan cheese and miso dissolve.
- Cook the ramen noodles in the boiling water for 2 minutes or until cooked.
- Remove and reserve about one-third cup of the noodle cooking liquid.
- Pour the noodles directly into the pan with the sauce and add the noodle cooking liquid.
- Mix the noodles in the sauce until it has thickened.
- Garnish with scallions, Parmesan cheese and the mini ham nuggets.
- 1/3 cup extra virgin olive oil
- 1 teaspoon miso paste
- 1/3 cup finely grated parmesan, plus extra to serve
- thin peel of 1 lemon
- 2 teaspoons lemon juice
- 2 packages ramen noodles
- 1⁄4 cup sliced spring onion (scallions)
- 100g serrano ham
